Apart from the work done by the bees themselves, the collection and extraction of honey is a relatively simple process in which small and large producers worldwide use very similar techniques. This is generally done with a centrifuge followed by a filtration process to remove pollen residue, bee body parts such as legs and wings, and solid wax particles from honeycomb residue.
The pollen contained in honey must be preserved as an essential ingredient. The processing temperature is strictly limited by law during the entire processing so that a correspondingly high viscosity must be taken into account.
